Behind the scenes
What happens when the cabinet goes to sleep?
At closing time, Wonderland doesn't simply switch off. The gelato is put away, the display cabinet is emptied and cleaned, and everything gets ready to do it all again.
After close
Put away
The gelato leaves the display cabinet for overnight storage.

Overnight
Cleaned
An empty cabinet gives us the chance to clean and prepare it for the next service.

Behind the cabinet
Made here
Behind the cabinet is where Wonderland begins. We make our gelato here in Labrador in small batches using carefully selected ingredients.

Before we open
Set up again
Before service, the cabinet comes back together โ tray by tray, flavour by flavour. And then the doors open.

What goes in
Real fruit, and milk from Maleny

More than a kilo a tray
Our sorbets are made with real fruit โ weighed out, blended and frozen here. More than a kilo of fruit goes into a tray, which is why the pineapple has fibres running through it, the peach keeps flecks of skin, and the green apple arrives with small pieces still in the blend.

Fresh when we can, frozen when we can't
Fruit is seasonal, so some of it comes in fresh and some of it comes in frozen โ which is why we say real fruit rather than fresh fruit. One sorbet works differently: Crimson Wonderland, our blood orange and ruby red grapefruit, is made from juice rather than whole fruit.

Milk from Maleny Dairies
The gelato starts as a milk base, pasteurised here before any flavour goes near it. The milk comes from Maleny Dairies, up in the hinterland behind the Sunshine Coast.
Want to see what made it into the cabinet?
The best way to see it is to taste it. Have a look at what's scooping, or come and find us at the Aqua Complex in Labrador, right by the Broadwater.
